Combining the goodness of Olive Oil and the lower temperatures (non-deep fried) this is the healthiest portion of chips you ever had!
Prep: 5 min // Bake: 30 min

Why are these Chips Healthy?
My version of chips is somewhat healthier as they are oven-baked. When you deep fry potatoes, you're cooking them at a temperature exceeding the oil's smoke point (approximately 200-210°C). This inevitably leads to the formation of harmful lipid peroxidation products, which are believed to contribute to the development of various diseases, such as cardiovascular disease and cancer (according to science). Oven baking at lower temperatures (180°C) prevents overheating of the oil, thus avoiding the "deep frying" process.
Ingredients
3-4 medium potatoes, as many as you want (use floury ones like Maris Piper, King Edward etc - also works well with Sweet potatoes)
2-3 tbsp seasoning mix (see suggestions below) or try my spice mix that kids love: sweet paprika, salt, pepper and fine semolina (to give a rustic look)
Olive oil
1 tsp dried oregano for serving (optional)
Method
Preheat the oven to 180c.
Cut the potatoes (skin on) and toss them into a bowl with your seasoning mix (or paprika, salt, pepper and semolina) and optionally some more salt (if your seasoning does not have already).
Spread the potatoes on a baking tray and roast for 25-30 mins.
Serve with some additional oregano and anything else you love (I go crazy for some crumbled feta topping).
Dips and Sauces
And some healthy dips I suggest for serving:
Greek Ketchup ("Paprika" sauce from Thessaloniki)
Greek Tzatziki (healthy as hell)
Avocadaise (healtier Avocado Hollandaise)
Shopping List
Veggie Cutter: For this recipe, I used a revolutionary fast and easy hack of cutting nice and thick cut chips! I haven't been sponsored to advertise, but this kitchen tool, OXO Veggie Chopper has saved my life. Not only cut all your veggies, but a whole potato can fit and be pushed and cut into chips. It is an utterly useful and durable gadget, especially if you have kids where potato chips will be on your plate pretty often.
Seasoning Mix: When it comes to spice mixes I always want to be creative and try my own mixes, but I have a few of Saldva Spice Mix beasts always hidden in my cupboard for various occasions. For chips I would suggest either the All Purpose Ultimate Rub or the Veggie War Rub.
Guilt free chips, wow!
