Oven-Baked Healthy Potato Chips

Combining the goodness of Olive Oil and the lower temperatures (non-deep fried) this is the healthiest portion of chips you ever had!

Why these Chips are Healthy?

My version of chips is a little bit healthier being oven-baked. When you deep fry the potato you are cooking it at a temperature higher than the oil's smoke point (which is around 200-210c). That inevitably produces harmful products of lipid peroxidation, which have been believed to be responsible for the pathogenesis of many diseases like cardiovascular disease and cancer (science says). Oven baking at lower temperatures (180c) does not overheat your oil and therefore there is no "deep frying" process involved.

What's more, I used a revolutionary fast and easy way of cutting nice and thick healthy chips! I haven't been sponsored to advertise, but this kitchen hack, OXO Veggie Chopper has saved my life. It is a useful and durable gadget, especially if you have kids where potato chips will be on your plate pretty often.

The potatoes are quite plain, olive oil and a special seasoning mix a friend suggested to buy. You can find in Amazon Spice Mix for Pizza and Pasta or make your alternative as I suggest below. I'd recommend giving Silk Route a try; it looks expensive but it's delicious and comes in a big pack that will last forever.


Ingredients

  • 3-4 medium potatoes, as many as you want (use floury ones like Maris Piper, King Edward etc - also works well with Sweet potatoes)

  • 2-3 tbsp ready-made seasoning mix (like this one) or try my spice mix that kids love: sweet paprika, salt, pepper and fine semolina (to give a rustic look)

  • Olive oil

  • 1 tsp dried oregano for serving (optional)

Method

  • Preheat the oven to 180c.

  • Cut the potatoes (skin on) and toss them into a bowl with your seasoning mix (or paprika, salt, pepper and semolina) and optionally some more salt (if your seasoning does not have already).

  • Spread the potatoes on a baking tray and roast for 25-30 mins.

  • Serve with some additional oregano and anything else you love (I go crazy for some crumbled feta topping).

  1. Greek Ketchup ("Paprika" sauce from Thessaloniki)

  2. Greek Tzatziki (healthy as hell)

  3. Avocadaise (healtier Avocado Hollandaise)
